(1) used to do sth. means "used to do something".
e.g. We used to work in the same workshop.

be used to doing sth. is an idiom, meaning "used to doing something", used can be modified with quite. If the process from being unaccustomed to becoming accustomed is emphasized, get or become is often used instead of be.
e.g. Perhaps he is used to taking his time.
Perhaps taking his time has long become his habit.
He has got quite used to staying up late.
He was used to staying up late.
be used to do sth. is the passive structure of use, meaning "to be used to do...".
e.g. Wood can be used to make chairs and desks.
Wood can be used to make tables and chairs.
(2) ever since means "from...", which can lead to time adverbial clauses. The main clause is usually in the present perfect tense, and the predicate verb of the main clause should be a continuous verb, and the subordinate clause should be in the past tense.
e.g. Ever since he left for Canada last year, I haven’t seen him again.
I haven't seen him since he went to Canada last year.
Ever since can also be placed at the end of a sentence, meaning "from now on (always...)".
e.g. The old man went to Beijing in 1949 and has lived there ever since.
