Activity 1: Taste rice

Tasting tasks:

1. Don’t chew when you first taste it. Does the rice have any original taste?

2. Then chew it repeatedly for about 1-2 minutes. Feel any changes in the taste of the rice?

Thoughts after tasting:

Is rice actually sweet? If the sweetness in rice comes from chewing, what has happened to it?

Activity 2: Observe starch

Starch, also called cornstarch, is a common cooking item in the kitchen.

Experiment 1: Changes in starch and iodine

Experimental steps:

1. Place the petri dish containing starch on the white paper

2. Use a dropper to drop 1-2 drops of iodine on the starch. Observe carefully. What changes have occurred to the starch?

Think about it:

Is the blue-purple substance still rice and starch?

Is it a new substance?

What kind of changes have occurred in them?

How can we take advantage of this change?

What we found:

There are four main categories of foods containing starch in life:

Cereals and noodles: rice, glutinous rice balls, cereals, bread, steamed buns, noodles, corn, cakes, biscuits...

Root vegetables: potatoes, taro, sweet potatoes, pumpkins, lotus roots, yams, sweet potatoes...

Legumes and vegetables: peas, mung beans, red beans...

Fruit foods: bananas, apples, dates, peaches...

Expand and extend:

The chemical reaction between starch and iodine is used for:

1. Detect counterfeit banknotes. The printing of banknotes requires a high degree of secrecy, and many measures are taken to prevent counterfeiting, one of which is to remove the starch from the paper. Just drop iodine on the banknotes and see if the banknotes turn blue. If blue appears, it is counterfeit.

2. Treat iodine poisoning. People are poisoned by accidental ingestion of iodine, so taking starch orally is a simple and easy way.
