Why does rice become sweet?

The reaction between starch and iodine has many different uses, including the detection of counterfeit banknotes. Banknote printing technology requires a high degree of confidentiality, and many counterfeiting measures are taken during the production of banknotes, including removing starch from the paper. Counterfeiters cannot master all the money-printing techniques, so the police only need to drop iodine on the banknotes to see if the banknotes turn blue. If blue appears, the banknotes are counterfeit.

Another application of the starch-iodine reaction is to treat iodine poisoning. Since starch can react with iodine and people become poisoned by accidental ingestion of iodine, oral administration of starch becomes a simple and easy method.

Make mysterious letters

Use a brush dipped in a liquid prepared from starch to write a few words on a white paper. After drying, give it to your classmates and ask them to think of ways to make the words appear on the white paper.

Spray iodine evenly on the white paper. The starch turns blue when it encounters the iodine. After a while, blue words appear on the white paper.
